Bob's Red Mill Walrus Bread Recipe Reviewed

Yesterday I made Walrus Bread. This recipe was on the Bob's Red Mill White Rice Flour packaging.

I have no idea why it was named Walrus Bread. Would love to know the story behind the name. If anyone knows please tell me!!!

Directions

Bread Machine Instructions:

In a large bowl mix the first 7 ingredients together (garbanzo bean flour through yeast). In another bowl blend together the water, eggs, oil and vinegar. Add wet ingredients to the dry mixture; blend well. Spoon bread dough into the bread maker bucket. Set control for basic white bread and start. Finished loaf should be about 5 inches high. Makes 1-1/2 lb. loaf.
 
I followed the instructions exactly and thought it turned out great. Forgot to take photo's. It was very moist. Daniel still likes the Gluten-Free Whole Grain Bread for the Bread Machine Recipe best. It will be hard to top this one for him. Patricia did not get a chance to taste it yesterday. I will give you an update later on her opinion.

On a side note, I realized after looking for more information about Bob's Red Mill, that I went to the visitor center many years ago. I installed a laboratory instrument in the same town and this is where the client wanted to eat. I remember it being packed, having an extensive menu and loving the gift shop. Small world...Would recommend going if you are in the area:

Gluten Free Flax Bread

After much web surfing looking for a gluten free Flax bread recipe, I decided to try one I found on food.com.

Ingredients:



 1 1/4 cups gluten-free flour (Bob's Red Mill White Rice Flour)

Directions:

Follow directions for your bread machine or go to the site for manual method.

I did not have any honey and used brown sugar instead. 

The loaf was smaller than other recipes but it worked out fine in the bread machine. I was suprised at how strong the flax flavor was considering the amount in the recipe. I personally enjoyed this heartier bread. However the http://www.bobsredmill.com/recipes.php?recipe=138, is still the favorite for my teenagers.

I meant to mention that the last time I made the recipe, I followed it completely with two exceptions. I used Smart Balance oil instead of pure Canola oil and substituted fat free half and half for the non dairy creamer. I have to say it was the best loaf to date!

Food.com does a nice job with the presentation of recipes.

Gluten Free Pantry French Bread and Pizza Dough, and Favorite Sandwich Bread Mix

Today I would like to discuss two mixes that I made in my Bread Machine:

French Bread and Pizza Dough Mix



and Favorite Sandwich Bread Mix



I prepared both recipes according to the instructions using light crust and the quick cycle for French Bread(first time using that feature) and Basic cycle for Favorite Sandwich Bread.

French Bread had a nice flavor but it was crumbly and dry from the moment it was taken out of the machine. I may give it another try using the full cycle. I did not try using it for pizza dough.

Favorite Sandwich bread came out nice and moist and we enjoyed it the first day. By the second day it was already drying out and crumbling. I would not buy this again unless I was short of time and felt it would be consumed within the first 24 hours.

Gluten-Free Whole Grain Bread for the Bread Machine Recipe

Used light crust setting and basic mode on my bread machine.

Whole Grain Bread for the Bread Machine (Gluten Free)

This gluten free recipe is over 50% whole grain using the Brown Rice Flour.

Directions

Stir together in a bowl: rice flour, tapioca flour, potato starch, cup garbanzo bean flour, sea salt, xanthan gum, non-dairy creamer and sugar.

In a separate bowl, whisk together the hot water, eggs, vinegar and oil. Place the wet ingredients in the baking pan. Pour the dry ingredients on top of the wet. Make a small well on the top middle of the dry ingredients and add the yeast.

Set the bread machine according to the bread machine directions and press start.

Remove from bread machine when bake cycle is complete. Invert pan and gently shake to remove bread. Cool upright on a rack before slicing.  Makes one 1-1/2 lb loaf (16 slices).



 I followed the recipe with a few substitutions only because I did not have the ingredients in my pantry:
1- Corn Starch instead of Potato Starch
2- Garbanzo Fava Flour instead of Garbanzo Flour
3- Smart Balance instead of Canola Oil
4- Fat Free Half and Half instead of Non-Dairy Creamer

I did not use Bob's Red Mill Tapioca Flour, because my usual grocery store does not carry it. I do have it now and will switch to that product once I have used all of the Ener-G tapioca flour.
To date this is by far the recipe my family enjoys the most. Great flavor and moist. I can get three days of freshness from this bread before my children complain that it is dry. It makes awesome toast once it gets to that point.

I have learned that it is never a good idea to microwave gluten free bread to warm it. The consistency completely changes. Use a toaster or oven.
I have used it three times now. The second time I substituted melted butter for the oil and added an additional egg. I will continue to do that.  Next I will review a couple of packaged mixes I tried.

Gluten-Free Bread

Finding a good source for fresh gluten-free bread that is readily available and enjoyed by the whole family has been my biggest challenge. Many different taste. American-Grafrutti bakery in Roswell has turned out to have the most gluten-free food items that my family enjoys. The only problem is, they are not close to where we live and Daniel will only eat fresh bread. That means a two day shelf life possibly three at a stretch.
For Christmas I asked for a bread machine. I would like to start my blog with the recipes I have tried so far.
After much research, I decided on the Zojirushi Home Bakery Supreme 2-Pound-Loaf Breadmaker. I use the light crust setting, basic cycle, and promptly remove from the machine when the cycle is finished.

Christmas Day I used a mix that was actually amazing. I was surprised how good it was. My whole family was happy!

Speaking of Bob's Red Mill products. We have tried numerous products and have been extremely pleased.
